From Acai Berry to Bottle
Acai roughly translates to “fruit that cries.” You might think it has everything to do with an ancient myth, but it’s much simpler than that: when acai berries are hanging on the tree, it looks like tears are rolling down.
Sometimes the simplest explanation is the best. It’s what we’re all about at Genesis Today: openness about our ingredients and a return to the simple.
Our farmers harvest acai the way it’s been done for hundreds of years. They tie a piece of linen around their feet to help them easily climb up to the acai berries that are dozens of feet above the ground. When they finally reach the top, they expertly dispatch the berry branch with a machete and climb down with their prize.
Then things get difficult.
The Amazon is pre-set to rot food quickly. It’s humid. It’s teeming with insects. And it’s hot.
What this means to you is that if your acai berries aren’t processed almost immediately, you’re consuming a subpar product. It’s the primary reason acai wasn’t known outside of the Amazon until recently – it spoils rapidly.
The first step (after stripping the vines of acai berries and putting them into baskets) is shipping them down the river to the processing area. Our berries are processed right next to the riverbed to ensure they’re pulped as soon as possible. The berries are put into a machine that uses water to force the pulp and skin from the seed.
Acai berries contain very little pulp. The seed takes up approximately 90% of the fruit. In fact, it takes approximately 350 berries to make a single 16 ounce bottle of Acai 100.
Quality vs Regular Acai Juice
What’s done from this step on separates a quality supplier from the rest.
There are more or less 3 choices when it comes to making acai juice:
- Provide the entirety of the pulp. The more viscous, the better.
- Concentrate the juice and add water back in later.
- Reconstitute the juice from freeze-dried acai powder.
The first option is the only way you can be absolutely certain you’re getting the nutrients you want from acai. The naturally present omegas are sensitive to heat, light and air. By either making a concentrate or exposing the juice to the air for too long, much of the omegas are destroyed. Acai must be processed within 24 hours, but the sooner, the better.
Most acai berry juices fall in the 2nd class. Genesis Today follows the first choice when making our juice. It’s why we are the only acai juice that contains omega-7. If your favorite acai juice is missing omega-7, the product was likely denatured somewhere along the way.
Aside from looking at the label, you’ll know if your acai juice contains any omegas the second you open it up. There will be a glossy sheen on top of it if omega fatty acids are present. If you shake it up, the omegas will re-disperse into the juice.
Genesis Today adds only a splash of citric acid for stability. The rest is pure acai juice. We do not add any sugar or other juices. Acai 100 is gluten-free, certified USDA organic and kosher.
